Easy Keto/low carb Green chili chicken and cauli rice. 3-4 boneless chicken breast/thigh cut into chunks 1 block of cream cheese at room temperature 1 cup shredded cheese or your choice (I used fiesta blend) 1/2 tsp. garlic powder 1/4 tsp. cumin 1 4 oz. can of green chilies 1/2 10 oz. can of green enchilada sauce Salt and pepper to taste 2 cups cauli rice (I used frozen) Preheat your oven to 375. Put both chicken and cauli rice in a casserole dish and salt and pepper to your liking. Mix in green enchilada sauce. In a medium bowl mix cream cheese, shredded cheese, green chilies

, garlic powder, cumin and salt and pepper to taste. Spread cream cheese mixture over chicken and rice. Bake for 30-45 minutes.
